After the food is cooked, set your alarm temperature to 41°F, start the timer and follow your SOP for cooling. When the food cools down to 41°, the timer will automatically stop to show the total time it took to cool to the safe temperature. You can also use this thermometer to see the core temperature while your food is cooking, reducing the risk of undercook-ing.
