Which MLB Ballparks Scored Best on Recent Health Inspections?

Millions of baseball fans attend ballparks across North America annually, buying some peanuts and Cracker Jack—and hot food, too. But what are they getting themselves into?

Thousands of public inspection records gathered from local health departments in the United States and Canada reveal that food safety varies widely across Major League Baseball’s venues. Inspectors uncovered many concerning practices, from nearly 250 total violations at Dodger Stadium to a single concession stand at Tropicana Field that racked up 25 violations alone. They also found stadiums, like Safeco Field, in stellar condition.

Sports Illustrated analyzed the most recent inspection data to compile a ranking of the best and worst stadiums based on food safety.

Angler Offers Tips on Safest Options For Fish Lovers

Fish on ice.jpg

Apart from the fact that fish is rich in protein and low in saturated fat, it is also a good source of omega-3, a fatty acid which is known to reduce the risk of abnormal heartbeats that can cause sudden death. The same fatty acid also helps to decrease triglyceride levels, lower blood pressure, and slow growth rate of atherosclerotic plaque.

The American Heart Association suggests fish consumption at least two times each week, and each serving must be 3.5 ounces cooked which is equivalent to three-fourths of a cup of flaked fish.

Meanwhile, the North Carolina Division of Public Health states that consumers must avoid eating fishes that contain high levels of mercury. This health organization also listed some fishes that have low amounts of the said contaminant.

Here are five of the fishes that pose less health risk.

Fighting slime: Researchers develop bacteria-killing plastic film

three_quarter_HR.gif

Bacteria film.jpg

Researchers at the University of California – Davis have designed plastic films that kill bacteria with biofilms and prevent bacteria from forming biofilms in the first place, preventing bacterial contamination in food or biomedical applications.

According to a report from the American Society for Microbiology (ASM), “Biofilms are aggregates of bacteria that highly increase bacterial resistance to antimicrobials, as well as to disinfectants.” They are also, according to the researchers, the leading cause of cross-contamination between food and non-food materials.

The researchers tested the new plastic films against common foodborne pathogens, Escherichia coli (E. coli) and listeria. The films can be adapted to a number of different shapes including conveyor belts, food-contact surfaces, utensils and other equipment and surfaces.

A little water in your whiskey?

whiskey-water.jpg

Scientists test old advice that water improves flavor

If anyone has suggested adding a little water to your whiskey, you may want to give it a try. Rather than watering it down, the addition may act as a flavor enhancement, and we now know the science behind it, thanks to a new study.

The combination is a bit counterintuitive, which is part of the reason researchers wanted to look at the molecular chemistry behind what's happening in your whiskey glass.

On the surface, whiskey seems simple: It's mostly grain and water that goes through a specific process. But from a chemistry standpoint, whiskey includes a complex variety of molecules that contribute to its unique taste. One of those is the compound guaiacol, which lends itself to the smokiness associated with some whiskeys.

Guaiacol is the molecule that two researchers from the Linnaeus University Center for Biomaterials Chemistry in Sweden focused on for their study, published in the journal Scientific Reports.
