America is Drowning in Milk Nobody Wants

America’s dairy farmers face a growing list of challenges: The Trump administration’s trade wars have coincided with an extended period of already low milk prices. The strong dollar is driving down exports, and consolidation has led to farm closures all across the country. Most darkly, the long decline in American consumption of fluid milk, the dairy product that brings farmers the highest earnings, shows no sign of slowing.

The key ratio of income-to-feed costs reveals that dairy farmers have very little margin left these days, said Bill Brooks, an economist at INTL FCStone. Feed such as alfalfa and hay are more expensive than last year, as are labor and energy expenses.

With so little room to maneuver, even the smallest cutbacks can have a big effect.

The amount of milk dumped by farmers in the U.S. Northeast reached almost 145 million pounds through July, including 23.6 million pounds that month alone.

Oysters On The Half Shell Are Actually Saving New York's Eroding Harbor

Across New York City, more than 70 restaurants are tossing their oyster shells not into the trash or composting pile, but into the city's eroded harbor. It's all part of Billion Oyster Project's restaurant shell-collection program.

Once discarded, the shell joins hundreds of thousands of other half shells collected in blue bins and picked up (free of charge) from restaurants five days a week. The shells are trucked over to Governors Island in the heart of the New York Harbor. There, rolling shell hills sparkle in the sun while "curing" out in the elements for one year, a process that rids them of contaminants.

The shells then are moved to Billion Oyster Project's hatchery at the Urban Assembly New York Harbor School, a public high school on Governors Island that offers technical and vocational training in the marine sciences. In an aquaculture classroom's hatchery, student-grown oysters produce larvae in an artificially induced springtime environment. One reclaimed shell can house 10 to 20 new live oysters, depending on shell size.

Then, the oysters begin doing what oysters do — which, it turns out, is quite a lot. Oysters are natural water filters; each one cleans 30 to 50 gallons of water a day. They also provide food and shelter for all sorts of marine creatures, supporting biodiversity.

Packaging Matters study: Here’s what consumers look for in packaging

Understanding what motivates today’s shopper to complete a purchase is critically important. Consumers are increasingly satisfied with their overall experience with packaging, which has increased by 46 percent over six years, according to the 2018 Packaging Matters study from WestRock, a provider of differentiated paper and packaging solutions. Findings from the study indicate brands are keeping up with — and responding to — consumer preferences.

Conducted online by researchers at Reputation Leaders among 5,000 U.S. adults ages 18 and older, the study identifies three key components of packaging that matter to them and impact shopping decisions: functionality, trust and aesthetics.

Effects of Millennials on Culinary Food Safety

Millenial food.jpg

According to the Pew Research Center, millennials are expected to overtake baby boomers in the U.S. population in 2019. As a result, food and beverage trends will evolve at a pace that has not been seen in decades. Whereas baby boomers want traditional and recognizable food and venues, millennials are seeking the adventurous and experiential while demanding affordable, healthy, and local food choices.

In response to this massive purchasing clout, the restaurant industry is innovating at a record pace in terms of menu choices and business models. This puts a strain on food safety management systems, as new risks must be assessed and interventions implemented in a large organization. Marriott International’s global food safety team is not immune to these growing pains. We realize that innovation must be done responsibly to protect public health.
