What Makes a Saison a Saison?

When it comes to cooling down with a refreshing beer during the hot summer months, typically pale ales, hefeweizens and IPAs come to mind. But more recently, saisons have made a rise in popularity. The light flavor, bold taste and reasonable ABV of saisons have made it climb up the ranks to one of the most popular styles of summer beers today.

Emily Hutto set out on a quest to find out how craft-beer brewers across the country defined “saison.” 

“Polling craft-beer artisans about what makes a saison a saison, I received diverse responses, to say the least. Dann Paquette of Pretty Things Beer and Ale Project talked about sessionable English ales; Ryan Greenhagen of Mystic Brewing discussed local ingredients; Jason Yester of Trinity Brewing showed me paintings by impressionist artists; Gordon Schuck of Funkwerks elaborated on the aromatic possibilities of Opal hops; Ron Extract of Jester King Brewery quoted Yvan De Baets; and Chase Healey of Prairie Artisan Ales talked about the weather. In their varied approaches to saison, these brewers demonstrate just how versatile the style is. They’ve led me to the conclusion that a saison is whatever you make it be. Here’s how each of them has made the style his own.”

Here are some words you may have not associated together: manure and clean water. One dairy in Washington is turning manure into water using worms. Yes, we said worms.

AgDay national reporter Betsy Jibben travels to an award-winning dairy to see how they won a sustainability honor. She visits Royal Dairy in Royal City, Washington. Betsy talks with Austin Allred, the owner of Royal Dairy; Nicole Ayache, the director of sustainability initiatives with the FARM program and Antone Mickelson with the Northwest Dairy Association.

NEW Peel Plate CD Bacterial Tests
New Cultured Dairy versions of the CC, EC and EB plates are now available.  The CC-CD test detects and enumerates total coliform bacteria in cultured dairy products like sour cream, cottage cheese, yogurt and hard cheeses.  The EC-CD test detects and enumerates E. coli/coliform bacteria in cultured dairy products.  The EB-CD  for cultured dairy products test detects and enumerates Enterobacteriaceae bacteria.

NEW Peel Plate SA Bacterial Test
SA (Staphylococcus aureus) tests detect and enumerate Staphylococcal bacteria in food, serial dilutions of food, and environmental sponge samples.  Sample or sample dilution is added and incubated for 24 to 48 hours at 35-37 ºC.  The method sensitivity is greater than 1 colony forming units per milliliter (>1 CFU/mL) of test sample.
