Food Safety Priorities and Plans for 2020

For many of us, it is that time of year again: when we need to be ready for a new year, with budgets finalized, project plans put in place, long-term goals considered, and immediate goals for 2020 agreed upon.

Your work in food safety is a 24/7, 365-days-a-year responsibility, but you still have specific projects planned every year to improve your programs. So, as part of our Food Safety Insights program, we wanted to find out what are the key priorities you have in general for your program as well as what will be the key projects, initiatives, and regulatory requirements that will have your attention in the coming year.

So, we asked. And we received responses from more than 200 processors from around the world in a wide variety of processing categories.

Highlights of Craft Beer in 2019 (Infographic)

In 50 years, when beer historians look back at craft beer in 2019, they’ll find a few big themes: competition, independence and celebrating the roots of this incredible craft brewing community.

The Brewers Association (BA), the trade group for small and independent U.S. craft breweries and publisher of CraftBeer.com, is crunching the numbers and releasing its highlights of craft beer in 2019.
Growth Amidst Competition

The craft beer industry is increasingly more competitive. As of late 2019, the BA says the number of breweries operating in the U.S. has surged to a new milestone high, surpassing 8,000. Once the organization finalizes its data in early 2020, it’ll release the actual number, but the BA says “it’s certain” the number is above 8,000. The competitive market led to more closures, too; the BA estimates 300 breweries closed in 2019.

Even as the market becomes more competitive, craft brewers continue to collectively produce more beer. The BA won’t finalize its data until early 2020, but the group estimates craft brewers increased production volume 4% over last year.

Innovation Center for U.S. Dairy Releases Expanded Guidance on Pathogen Control


The Innovation Center for U.S. Dairy has released expanded guidance recommendations on how to control pathogens for processors.

The 90-page guide, “Controlling Pathogens in Dairy Processing Environments: Guidance for the U.S. Dairy Industry”, was authored by a team of dairy industry and sanitary design experts. It builds upon previous guidance that focused on Listeria monocytogenes to include best practices to control Salmonella and Cronobacter Sakazakii.

The initiative was led by the Innovation Center for U.S. Dairy, an organization founded by dairy farmers in 2008 to convene the entire industry on common goals and opportunities.

The guidance focuses on best practices for the separation of raw and ready-to-eat products, good manufacturing practices, sanitary facility and equipment design, principles of cleaning, and sanitation and environmental monitoring programs.

The guide includes easy-to-use checklists and is designed to be a one-stop reference document that the dairy industry can use to improve existing food safety programs to ensure adequate control of environmental pathogens.
