Brashears promises data, science and food safety modernization at FSIS

The $2 billion hog market slaughter industry will get more flexibility, and USDA’s Food Safety and Inspection Service will have greater inspection oversight. Mindy Brashears, the USDA deputy undersecretary for food safety, says the long-awaited swine modernization program is going be reality by year’s end.

She started six months ago and has become the chief advocate for the next rounds of FSIS modernization.

Past changes, like after the E. coli crisis, put FSIS in the reactive mode, she said.

“I look at modernization as the way to prevent the next crisis,”  she added.
And in her search of her new place of employment Brashears found something that could only excite a former professor — data. Or, as she calls it, “the data that’s just sitting here.” She acknowledges that FSIS is not a research science organization, but finds its data collection going back two decades or more based on “our protocols, our labs” is value that can be put work to help achieve the agency’s new goals.

How the Pufferfish got its Wacky Spines

Pufferfish are known for their strange and extreme skin ornaments, but how they came to possess the spiky skin structures known as spines has largely remained a mystery. Now, researchers have identified the genes responsible for the evolution and development of pufferfish spines in a study publishing July 25 in the journal iScience. Turns out, the process is pretty similar to how other vertebrates get their hair or feathers -- and might have allowed the pufferfish to fill unique ecological niches.

Farber Pham Diastaticus Medium (FPDM)

In conjunction with University of the Sciences, Weber Scientific is pleased to announce the launch of a novel microbiological media for the detection and enrichment of Saccharomyces cerevisias var. diastaticus. Saccharomyces cerevisiae var. diastaticus is a wild yeast contaminant which represents a major beer spoilage threat. Product contamination has led to costly product recalls as infection may lead to off-flavors, over-attenuation, and over-carbonation, potentially causing gushing beer, exploding packages, or non-compliance with federal reporting of alcohol by volume. Unlike Lin’s Cupric Sulfate Medium (LCSM), this new formulation supports growth of all diastaticus strains tested and inhibits the growth of traditional brewer’s yeast. Brewers can now access a quick and reliable method to test for diastaticus contamination at all points of the brewing process.

•   A wide variation of diastaticus strains will grow on FPDM, including
those that will not grow on LCSM, as confirmed by PCR analysis
•   FPDM promotes stronger growth of diastaticus colonies as compared
    to LCSM alone
•   Growth becomes visible as soon as 48 hours after inoculation when
    incubated at 30°C
•   FPDM is confirmed to inhibit multiple strains of traditional brewing
•   Samples can be taken from fermenting beer, finished beer, yeast
    slurries, and environmental swabs
•   Diastaticus strains which promote over-attenuation produce zones of
clearing around colonies, allowing easier identification
•   FPDM will detect diastaticus strains regardless of the strain’s ability to
    sporulate or over-attenuate

Patience for a Pint: The Art and Science of the Slow Pour

beer pour.jpg

It’s hard not to smile at a proper slow pour. A thick head of foam rises above the rim of the glass like a cloud trying to escape its liquid world. A number of breweries and beer bars are pushing the practice and creating converts with each new glass.

It’s said that good things take time. That is true when it comes to certain beers, especially ones that have been lovingly aged in tanks or barrels before they are packaged and ready to serve. At that point, though, it’s a fairly quick affair. Bottles or cans are popped and poured into a glass; tap handles are opened as the beer slides into a glass. Serve. Drink.

Now, a sprinkling of breweries and bars around the country is asking customers to wait a few extra minutes for their glass of beer so that servers can create a sturdy pillowy crown of foam that is not only endlessly Instagramable but will hold up for the duration of the drinking experience and change the very flavor of the beer.
