Making sense of bacon love

Camp bacon NLT.jpg

bacon edition.jpg

Why do we love bacon so much?
Just ask bacon aficionado Ari Weinzweig.

Take a trip to Camp Bacon with Ari Weinzweig, co-founder of Zingerman's Delicatessen in Ann Arbor, Mich. as he guides you on a personal tour of bacon's long and curious history. Camp Bacon was started in 2010, to bring together bacon-lovers, bacon-makers, cooks, curers and simply anyone who likes to learn, eat and enjoy cured and smoked pork belly.

Because there's so much more to bacon than the run-of-the-mill bacon-lover would ever know, Weinzweig decided to write a book about it. Published in 2009, "Zingerman's Guide to Better Bacon - Stories of Pork Bellies, Hush Puppies, Rock 'n' Roll Music and Bacon Fat Mayonnaise

"includes a who's-who of Weinzweig's favorite bacon curers in the US, stories of the evolution of bacon and its different uses throughout history.

When describing his book and the reasons behind writing it, Weinzweig says, "Bacon is so integral to the culinary history of this country. The roots are so deep in our cooking, I think of it as the olive oil of North America."

Scientists from Oregon State University's Hatfield Marine Science Center say they've created and patented a new type of seaweed that has the potential to be sold commercially as the next big superfood.

The tasty creation is actually a new strain of red marine algae called dulse that is packed full of minerals and protein and looks like red lettuce. It's nutritious, fast growing, and when it's fried, they say it tastes like bacon.

Watch this Oregon State University video which explains the research and development of dulse seaweed. WATCH VIDEO.
