Will a “purple blow torch” be the next big food safety innovation?



USDA researchers said that cold plasma treatment, otherwise referred to as a “purple blow torch” by food safety scientists, can kill 99.9% of norovirus on blueberries without damaging the fruit, according to Food Safety News.

Human norovirus is known to be one of the most common etiological agents that contaminates food and causes foodborne illness, and blueberries are very susceptible to contamination by biological hazards from pre-harvest to post-harvest stages.

Researchers also said that cold plasma treatment can extend the shelf life of blueberries by slowing spoilage rates without effecting firmness, color, or anthocyanin concentration.

Another factor making blueberries prime for the research is the fragile nature of berries in general. They also have some of the shortest shelf lives in the produce aisle, adding pressure to move them through the harvest and packing process as quickly as possible.

On-farm Culturing: A Culture of Success

In 2009, Green Valley Dairy, Krakow, Wis., was looking for ways to better manage costs. An on-farm culture lab was one potential way to achieve that.

On-farm milk culture is a tool that can help you reduce the amount of antibiotics being used, decrease costs associated with clinical mastitis, and increase milk quality and profitability. 

The Jacobs family manages 3,500 cows on their dairy, established in 2000. The farm, owned by John and Mark Jacobs, John’s three sons—John Jr., Paul and Joe—and Ken Peters, is first generation. “Being first-generation probably helps because we know there is a lot we don’t know, so I might be less afraid to ask questions,” Jacobs says.

This is a story of a dairy’s journey in creating and utilizing an on-farm culture lab, which helped them achieve their goals.

FBI Says Terrorists May Target Food Sector

Many people associate terrorism with spectacular attacks such as those that occurred on September 11. However, lone wolf attacks are far more likely to happen in what has unfortunately become the new normal. “The last thing on your mind is a terrorist being interested in food. It does exist, and bad guys do have an interest in this area,” said Special Agent Scott Mahloch, weapons of mass destruction coordinator for the Chicago division of the FBI during the Food Safety Consortium on December 5, 2016.

According to the Department of Homeland Security, with 2.2 million farms and 900,000 restaurants in the United States, the food and agricultural sector accounts for 1/5 of the national economic activity. There are several industry targets for terrorism: Food processing facilities; food storage and distribution; restaurants, grocery stores and markets; commercial facilities; and cruise lines.

While Mahloch emphasized that there is no imminent threat to the food sector, one of the biggest areas of concern for this particular industry is the insider threat.
